Apricots before processing. |
Canning apricots is just like canning peaches (see complete peach instructions here), except:
* Cut them in half and remove the pit; leave the skins on.
* Use a light or medium syrup
* Process pint jars for 25 minutes, quart jars for 30 minutes.*
8 to 10 lbs. of apricots yields about 8 pints. Easy - and so rewarding!
* NOTE: If you live at a high altitude, read this important information about adjusting canning times.
