Canning Apricots

Apricots before processing.
Apricots are something I love to can. They are easy as can be, my children love them, and they are a terrific source of vitamin C. And unlike most other fruits, you don't have to remove their skins before canning.

Canning apricots is just like canning peaches (see complete peach instructions here), except:

* Cut them in half and remove the pit; leave the skins on.
* Use a light or medium syrup
* Process pint jars for 25 minutes, quart jars for 30 minutes.*

8 to 10 lbs. of apricots yields about 8 pints. Easy - and so rewarding!
