"Barbecued" Chicken Burritos

Here is a recipe that's cheap, easy, and popular with my whole family. You can make it cheaper still by using less chicken and more beans. 

What You'll Need: 

1 tablespoon olive oil 

3/4 lb. skinned, boned, frozen chicken breasts 

1/2 cup chopped onion 

3 garlic cloves, minced 

1/3 cup bottled barbecue sauce

1 (15 oz.) can black beans 

1/2 shredded cheddar cheese 

burrito-sized flour tortillas 

sour cream 

 
How to Do It: 

1. Begin by poaching the chicken breasts: Fill a large pot with water (or stock), toss in the frozen chicken, and boil until tender and cooked through. Shred the chicken with two forks. (It will be drier, but if you prefer, use fresh or thawed chicken chopped into bite-sized pieces and brown in the skillet.)

2. Add oil, chicken, and onion to a skillet and cook until onion is tender. Add garlic, stirring until tender. 

3. Stir in barbecue sauce and beans (with liquid from the can). Heat through. 

4. Sprinkle with cheese and remove from heat. 

5. Fill burritos with this filling, add a dollop of sour cream, then roll up.

  1. Gonna try this one for dinner tonight--got the chicken and beans cooking, though all I had was kidney beans. :) Sounds yummy!

  2. It was yummy--just thought I'd post an update. Hubby said that if it gets me to eat beans (which I usually hate), we can have it again. But, I'll have to try a different BBQ sauce. Living in Kansas City, this shouldn't be a problem! LOL!
